Southwestern Egg and Cheese Breakfast
Ingredients
- 2 pounds Sausage -browned, drained, crumbled
- 1 Onion -chopped
- 1 Green pepper -chopped
- 8 ounces green chilies -chopped
- 1 pound Co-Jack cheese -shredded
- 18 Eggs
Instructions
- Layer IN ORDER in crockpot:
- pound of the sausage
- 1/2 of the onion
- 1/2 of the green pepper
- 1 can of the chilies
- half of the cheese
- remaining pound of sausage
- the rest of the onion
- the rest of the green pepper
- the second can of chilies
- the rest of the cheese
- Beat eggs and pour over all.
- Cover and cook at LOW for 8 to 10 hours.
