Southwestern Egg and Cheese Breakfast

Ingredients

  • 2 pounds Sausage -browned, drained, crumbled
  • 1 Onion -chopped
  • 1 Green pepper -chopped
  • 8 ounces green chilies -chopped
  • 1 pound Co-Jack cheese -shredded
  • 18 Eggs

Instructions

  1. Layer IN ORDER in crockpot:
  2. pound of the sausage
  3. 1/2 of the onion
  4. 1/2 of the green pepper
  5. 1 can of the chilies
  6. half of the cheese
  7. remaining pound of sausage
  8. the rest of the onion
  9. the rest of the green pepper
  10. the second can of chilies
  11. the rest of the cheese
  12. Beat eggs and pour over all.
  13. Cover and cook at LOW for 8 to 10 hours.
