Breakfast Bowl

Ingredients

  • 2 sweet potatoes peeled and diced
  • 1 yellow onion diced
  • 1 cup sweet bell peppers (any color) diced
  • 6 oz. Soy chorizo
  • 1 tsp. dried sage
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. red chili flake (optional)
  • 1 medium avocado sliced
  • 3 TBL vegetable oil

Instructions

  1. Heat a large skillet on medium-high heat. Add 2TBL of the oil and soyrizo. Cook for a couple of minutes, breaking it up as it cooks.
  2. Add sweet potatoes. Sauté until tender (about 7 min.). Add onion, bell pepper, sage, red chili flake, and salt and pepper. Cook another 5 min or until onion is just starting to brown.
  3. To serve, spoon sweet potato mixture into bowls top with 1/4 avocado and your favorite hot sauce, if desired. Devour!
