Farmers Breakfast Casserole
Ingredients
- 3 cups (24 oz) frozen shredded hash browns
- 3/4 cups shredded monterey jack cheese
- 3/4 cups shredded cheddar cheese
- 1/3 cup mild salsa
- 1 cup diced ham
- 1/2 cup green onions sliced
- 4 eggs beaten
- 1 (12 oz) can evaporated milk
Instructions
- Preheat 350.
- Grease a shallow 2-quart baking dish. Spread hash browns evenly along the bottom. Sprinkle with cheeses, ham, salsa and green onions.
- Combine the eggs and milk in a bowl. Pour over potato mixture.
- (May cover and refrigerate up to 24 hours at this point.)
- Bake uncovered at 350 for 45 mins or until firm in center. Let stand 5 mins before serving.
