Farmers Breakfast Casserole

Ingredients

  • 3 cups (24 oz) frozen shredded hash browns
  • 3/4 cups shredded monterey jack cheese
  • 3/4 cups shredded cheddar cheese
  • 1/3 cup mild salsa
  • 1 cup diced ham
  • 1/2 cup green onions sliced
  • 4 eggs beaten
  • 1 (12 oz) can evaporated milk

Instructions

  1. Preheat 350.
  2. Grease a shallow 2-quart baking dish. Spread hash browns evenly along the bottom. Sprinkle with cheeses, ham, salsa and green onions.
  3. Combine the eggs and milk in a bowl. Pour over potato mixture.
  4. (May cover and refrigerate up to 24 hours at this point.)
  5. Bake uncovered at 350 for 45 mins or until firm in center. Let stand 5 mins before serving.
