Crock Pot Breakfast Casserole

Ingredients

  • 8 Strips Bacon Cooked and crumbled
  • 1 Onion Diced
  • 1 Red bell pepper Diced
  • 1 Clove Garlic Chopped
  • 2 pounds Frozen hash browns
  • 12 Eggs Beaten
  • 1 cup Milk
  • 1 1/2 cups Cheddar cheese Shredded
  • 1 teaspoon Dried dill
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper

Instructions

  1. Spray crock pot with non stick cooking spray.
  2. Sauté onion, garlic, and bell pepper for 5 mins.
  3. Place 1/3 hash browns in bottom of crock pot.
  4. Layer 1/3 bacon, 1/3 vegetables, and 1/3 cheese.
  5. Repeat layers ending with cheese.
  6. In a large bowl, mix eggs, milk, dill, salt, and pepper.
  7. Pour over ingredients in crock pot.
  8. Cover and cook on low 8-10 hours.
  9. When done, internal temp will be 160°.
