Cheesy Egg Breakfast Casserole Recipe

Ingredients

  • 12 large eggs
  • 1cup heavy cream or whipping cream
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 cans (8 ounces) chopped green chile peppers, drained (optional)
  • 12 ounces shredded Sharp Cheddar cheese

Instructions

  1. Preheat oven to 325°.
  2. In a bowl combine eggs, cream, salt, and pepper; beat until smooth and well blended. Stir in chopped chili peppers. Lightly grease a shallow 1-quart baking dish. Sprinkle cheese over bottom of prepared baking dish then pour egg mixture over cheese. Bake for 35 to 40 minutes, or until set. If desired, broil for a minute or two.
  3. You can add any of the meats or vegetable that I mentioned to make it a “complete” breakfast in one.
