Keto breakfast egg muffins
Ingredients
- 2 scallions finely chopped
- 12 eggs
- 5 oz. bacon cooked & chopped
- 6 oz. cheese shredded
- 2 T. pesto
- salt and pepper to taste
Instructions
- Preheat oven to 350. Grease muffin tin with butter. Add chopped scallions and bacon to bottom of muffin tin. Whisk eggs together with seasoning and pesto. Add the cheese and stir. Pour the batter on top of the scallions and bacon. Bake for 15 - 20 minutes or until set.
