Morning Glory Muffins

Ingredients

  • 2 1/2 cup All purpose flour
  • 1 cup Brown sugar firmly-packed
  • 2 teaspoon Baking soda
  • 2 teaspoon Cinnamon ground
  • 1/2 teaspoon Salt
  • 2 cup Carrot shredded
  • 1 cup Apple shredded
  • 3/4 cup Raisins
  • 1/3 cup Pecan chopped
  • 1/4 cup Coconut sweetened and flaked
  • 1/3 cup Vegetable oil
  • 1/3 cup Apple butter
  • 2 teaspoon Vanilla extract
  • 2 large Eggs
  • 2 large Egg white
  • 8 ounce Pineapple canned, drained

Instructions

  1. 1. Preheat oven to 350?.
  2. 2. Combine flour, brown sugar, baking soda, cinnamon and salt in a large bowl. Stir in finely shredded carrots and the next five ingredients; make a well in center of the mixture. Combine oil and next 4 ingredients; stir with a whisk. Add oil mixture to flour mixture, stirring until just moist. Do not overmix.
  3. 3. Spoon batter evenly into muffin cups coated with cooking spray. Bake at 350? for 25-30 minutes or until muffins spring back when touched lightly in the center. Remove muffins from pans immediately; let cool on a wire rack.
