Breakfast egg muffins
Ingredients
- 6 cup liquid egg whites or egg beaters
- 1 lb of ground turkey or (turkey bacon option)
- 2 cups chopped spinach
- 2 green bell peppers
- 2 red bell peppers
- 2 teaspoons onion powder
- Salt and pepper
- ( you can swap and add other veggies)
Instructions
- Preheat oven to 375
- Spray 24 muffin cups with cooking spray
- Add egg whites to bowl
- Stir in ground turkey, spinach, peppers, garlic, onion powder, cayenne pepper, salt and pepper
- Ladle the egg mixture into prepared muffin cups to about 3/4 full
- Bake until firm in the middle about 25-30 minutes
- Stir in air tight container and wrap in paper towel and cook in microwave for 30 seconds
