Florentine Breakfast Wedges

Ingredients

  • 9 ounces Spinach chopped
  • 10 Egg
  • 1/4 cup Heavy cream
  • 1 clove Garlic crushed
  • 1 tablespoon olive oil
  • 1 tablespoon Water
  • 4 ounces Mushrooms canned, sliced
  • 2 tablespoons Green onions chopped
  • 8 ounces Cream cheese
  • 4 ounces Romano cheese grated
  • 1/4 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 1/4 teaspoon Nutmeg
  • 1/4 teaspoon Paprika

Instructions

  1. 1. Lightly saute garlic in olive oil on medium heat. Add water and spinach, cover. let steam for 1 minute. Drain on paper towels.
  2. 2. Beat the eggs and cream. Mix other ingredients except cheeses and paprika, blend well.
  3. 3. Using a lightly greased (olive oil) 8 x 8 non-metallic baking dish, spread 1/2 spinach mixture on bottom. Cover the mixture with cream cheese (slice thin pieces and place over spinach). Spread out remaining mixture over cream cheese. Pour egg mixture over spinach. Sprinkle Romano cheese and paprika on top and bake for 40 minutes at 350F.
  4. 4. Cut into 8 pieces. Serve at once. Refrigerate leftovers.
