Chucks Power Breakfast

Ingredients

  • 1/4 Onion finely chopped
  • 2 tb Cilantro chopped
  • 1 Bagel - toasted
  • 6 Roma tomatoes - peeled; and
  • 1 Jalepeno pepper - seeded and
  • 2 tb olive oil
  • 3 Eggs
  • ; breast
  • Cream cheese - to taste
  • 1 Boneless; skinless chicken
  • Salt and pepper
  • 1/4 c Chives - chopped

Instructions

  1. Directions: In a small bowl, scramble eggs, cheese and chives. Cook over medium heat to desired doneness. Pound the chicken breast thin. Heat oil in a pan and saute chicken until done. Combine diced tomatoes, onion, cilantro, jalepeno and salt and pepper to form salsa. Serve all together with toasted bagel.
