Chucks Power Breakfast
Ingredients
- 1/4 Onion finely chopped
- 2 tb Cilantro chopped
- 1 Bagel - toasted
- 6 Roma tomatoes - peeled; and
- 1 Jalepeno pepper - seeded and
- 2 tb olive oil
- 3 Eggs
- ; breast
- Cream cheese - to taste
- 1 Boneless; skinless chicken
- Salt and pepper
- 1/4 c Chives - chopped
Instructions
- Directions: In a small bowl, scramble eggs, cheese and chives. Cook over medium heat to desired doneness. Pound the chicken breast thin. Heat oil in a pan and saute chicken until done. Combine diced tomatoes, onion, cilantro, jalepeno and salt and pepper to form salsa. Serve all together with toasted bagel.
