Hearty Breakfast Casserole
Ingredients
- 3 medium Baking potatoes
- 6-8 slices Bacon
- 1/4 cup Onion Minced
- 1 Cup Swiss Cheese Grated
- 1/2 cup Cottage cheese
- 5 Eggs Beaten
- 1/2 Tsp Salt
Instructions
- Cook potatoes in boiling waters until tender. Dice and peel if desired. Fry bacon, drain and reserve drippings. Lightly brown potatoes and onion in bacon drippings. Remove and combine with bacon, cheeses, eggs and salt. Bakr mixture in shallow buttered baking dish at 350 F for 30-40 minutes or until set in middle.
