Breakfast Pasta
Ingredients
- 4 ounces Linguini Dried
- 4 Eggs Whisked
- 1/4 cup Freshly Grated Parmesean
- 1/4 teaspoon Salt
- 1/8 teaspoon Black Pepper
- 1/2 tablespoon Extra-virgin olive oil
- 1 clove Garlic Minced
- 1/8 cup Parsley Chopped
Instructions
- Cook pasta according to directions on package. Drain.
- Whisk together eggs, parmesan, salt and pepper.
- Heat 1 tbsp oil in large saute pan over medium heat. Add garlic and saute 30 seconds. Add cooked noodles and egg mixture. Stir the mixture until the eggs are softly set, about 3-4 minutes.
- Garnish with chopped parsley and drizzle extra virgin olive oil on top. Serve.
