Morning Glory Muffins (6)
Ingredients
- 1 1/4 cups Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoon Baking soda
- 1/2 teaspoon Salt
- 1/2 teaspoon Cinnamon
- 1 cup Old-fashioned oats uncooked, or qucik-cooking oats, uncooked
- 1/3 cup Milk
- 3/4 cup Applesauce
- 1/4 cup packed Brown sugar
- 1/4 cup Molasses light / mild
- 1 tablespoon Canola oil
- 1 large Egg
- 3 medium Carrots shredded (1.5 cups)
- 1/2 cup Craisins
Instructions
- - Preheat oven to 400.
- - Grease 6 large muffin cups.
- - In a large bowl whisk together the flour, baking powder, baking soda, salt, and cinnamon.
- - Stir in oats.
- - In medium bowl with fork mix together milk, applesauce, brown sugar, molasses, oil, and egg until blended.
- - Stir in carrots and craisins.
- - Add wet mixture to flour mixture.
- - Stir just until flour in moistened (batter will be lumpy).
- - Spoon into prepared muffin cups (they will be full).
- - Bake 23 minutes or until toothpick inserted in center of muffin comes out clean.
- - Immediately remove muffins from pan and cool on wire rack.
