Morning Glory Muffins (6)

Ingredients

  • 1 1/4 cups Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Cinnamon
  • 1 cup Old-fashioned oats uncooked, or qucik-cooking oats, uncooked
  • 1/3 cup Milk
  • 3/4 cup Applesauce
  • 1/4 cup packed Brown sugar
  • 1/4 cup Molasses light / mild
  • 1 tablespoon Canola oil
  • 1 large Egg
  • 3 medium Carrots shredded (1.5 cups)
  • 1/2 cup Craisins

Instructions

  1. - Preheat oven to 400.
  2. - Grease 6 large muffin cups.
  3. - In a large bowl whisk together the flour, baking powder, baking soda, salt, and cinnamon.
  4. - Stir in oats.
  5. - In medium bowl with fork mix together milk, applesauce, brown sugar, molasses, oil, and egg until blended.
  6. - Stir in carrots and craisins.
  7. - Add wet mixture to flour mixture.
  8. - Stir just until flour in moistened (batter will be lumpy).
  9. - Spoon into prepared muffin cups (they will be full).
  10. - Bake 23 minutes or until toothpick inserted in center of muffin comes out clean.
  11. - Immediately remove muffins from pan and cool on wire rack.
