Spinach Soup
Ingredients
- 1 bunch Spinach
- 14 oz chicken broth
- 1/4 cup olive oil
- 1 cup Fresh mushrooms
- 3 tablespoons All purpose flour
- 1 cup low fat plain yogurt NOT NON-FAT!!!!
- 1 teaspoon Curry powder
- Salt & pepper
- 1 pkg turkey bacon
Instructions
- using a a large saucepan, wilt spinach in 2-3 T broth
- in a separate pan, fry mushrooms in olive oil or butter with flour, curry powder, salt & pepper
- puree in blender with remaining broth
- return to large saucepan and combine with plain yogurt. (If you use non-fat, the soup will separate–YUCK!) You may substitute cream instead if you are feeling skinny. It’s delicious, but oh, so bad for you!
- Serve with cooked, chopped bacon as a garnish. (I wouldn’t call the amount my family use a garnish, it’s more like a dump truck load…)
