Morning-Glory Bran Muffins

Ingredients

  • 1.5 cups All purpose flour sifted
  • 1 cup Bran unprocessed
  • 1 cup Brown sugar dark
  • 2 teaspoon Baking Soda
  • 2 teaspoon Cinnamon
  • 1/4 teaspoon salt
  • 1 cup carrots peeled and grated
  • 1 green apple peeled and grated
  • 1/2 cup raisins
  • 1/2 cup pecans chopped, coarse
  • 1/4 cup coconut grated
  • 3 eggs
  • 1/2 cup vegetable oil

Instructions

  1. Heat oven to 400 degrees. Lightly grease muffin tins.
  2. Combine flour, bran, dark brown sugar, baking soda, cinnamon and salt.
  3. Make a well in the center of the dry ingredients and add grated carrot, apple, raisins, pecans and coconut. Stir together just enough to moisten dry ingredients (do not beat).
  4. Add eggs and vegetable oil and stir lightly.
  5. Fill muffin tins to top and bake 35 to 40 minutes or until cake tester comes out clean.
