Morning-Glory Bran Muffins
Ingredients
- 1.5 cups All purpose flour sifted
- 1 cup Bran unprocessed
- 1 cup Brown sugar dark
- 2 teaspoon Baking Soda
- 2 teaspoon Cinnamon
- 1/4 teaspoon salt
- 1 cup carrots peeled and grated
- 1 green apple peeled and grated
- 1/2 cup raisins
- 1/2 cup pecans chopped, coarse
- 1/4 cup coconut grated
- 3 eggs
- 1/2 cup vegetable oil
Instructions
- Heat oven to 400 degrees. Lightly grease muffin tins.
- Combine flour, bran, dark brown sugar, baking soda, cinnamon and salt.
- Make a well in the center of the dry ingredients and add grated carrot, apple, raisins, pecans and coconut. Stir together just enough to moisten dry ingredients (do not beat).
- Add eggs and vegetable oil and stir lightly.
- Fill muffin tins to top and bake 35 to 40 minutes or until cake tester comes out clean.
