Morning Glory Muffins

Ingredients

  • 1/4 c Fructose
  • 1 1/2 ts Baking Powder
  • 1 Egg white
  • 2 c Flour
  • 1/2 ts Baking soda
  • 2 tb Vegetable oil
  • 1/2 md Mango; finely chopped
  • 2/3 c Fat-free yogurt; plain
  • 8 oz Crushed pineapple in juice;
  • 1/8 ts Salt
  • 1 md Orange; finely chopped

Instructions

  1. Mix all ingredients, adding fruit last. Spooin into muffin tims that have been coated tieh non-stick spray. Bake 15 minutes at 350 degrees.
