Liz’s Morning Glory Muffins

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups grated carrots, packed
  • 1/2 cup raisins
  • 1/2 cup grated coconut
  • 1/2 cup chopped pecans
  • 1 (8 ounce) can pineapple, drained
  • 1 cup applesauce
  • 3 large eggs, lightly beaten
  • 2 teaspoons vanilla extract

Instructions

  1. Combine first 5 ingredients in a mixing bowl, in a seperate bowl, stir together remaining ingredients; add to flour mixture, stirring until just moistened.
  2. Place paper baking cuts in muffin pans. Spoon batter into cups filling 2/3 full.
  3. Bake at 350 for 25 minutes or until golden brown. Remove from pans immediately.
