Liz’s Morning Glory Muffins
Ingredients
- 2 cups flour
- 1 cup sugar
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 cups grated carrots, packed
- 1/2 cup raisins
- 1/2 cup grated coconut
- 1/2 cup chopped pecans
- 1 (8 ounce) can pineapple, drained
- 1 cup applesauce
- 3 large eggs, lightly beaten
- 2 teaspoons vanilla extract
Instructions
- Combine first 5 ingredients in a mixing bowl, in a seperate bowl, stir together remaining ingredients; add to flour mixture, stirring until just moistened.
- Place paper baking cuts in muffin pans. Spoon batter into cups filling 2/3 full.
- Bake at 350 for 25 minutes or until golden brown. Remove from pans immediately.
