(What’s the Story) Morning Glory Muffins

Ingredients

  • 1 1/2 cups whole wheat pastry flour
  • 1/2 cup whole wheat flour
  • 3/4 cup natural sugar
  • 1 T. ground cinnamon
  • 1/2 tsp. ground allspice
  • 1/2 tsp. nutmeg
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 teaspoon salt
  • 2 cups grated carrots
  • 1 apple; peeled and grated
  • 1 cup raisins
  • 2 Eggs (or 1 egg and 2 egg whites)
  • 1/2 cup apple sauce
  • 1/4 cup vegetable oil
  • 1/2 T. vanilla extract
  • 1/2 T. almond extract
  • 2 T. chopped walnuts
  • 2 T. toasted wheat germ

Instructions

  1. 1. Preheat oven to 375?. Lightly oil 16 muffin cups, or coat with nonstick cooking spray.
  2. 2. In a medium bowl, whisk together eggs, apple sauce, oil, and extracts.
  3. 3. In a large bowl, stir together flours, sugar, cinnamon, allspice, nutmeg, baking powder, baking soda and salt. Stir in carrots, apples and raisins. Stir in applesauce mixture until just moistened. Spoon the batter into the prepared muffin cups, filling them about ? full.
  4. 4. In small bowl, combine walnuts and wheat germ; sprinkle over the muffin tops.
  5. 5. Bake for 15 to 20 minutes, or until the tops are golden and spring back when lightly pressed.
